Recipe: Simple Slow Cooker Meatloaf

Ingredients

  • 1 pound Bob Evans® Original Recipe Sausage Roll
  • 1 pound ground beef
  • 1 cup ketchup, divided
  • 1 (1.25 ounce) envelope dry onion soup mix
  • 1/2 cup dry bread crumbs
  • 2 eggs

Instructions

  1. In large bowl, combine sausage, beef, 1/2 cup ketchup, soup mix, bread crumbs and eggs. When well combined, shape into loaf to fit your slow cooker (round or oval). Place into slow cooker.
  2. Cover and cook on low heat 4-6 hours. Spread remaining 1/2 cup ketchup on top of meatloaf 30 minutes before serving. Cover and continue cooking on low heat for 30 minutes.

Quick Notes

I’ve found that 1/1 ratio on beef to sausage can be a bit strong, so I’ve adjusted it to 1.5 beef/.5 sausage. I’ve also added my own seasonings and fresh onions and it still comes out just as good. I’ve even used bbq sauce in place of the ketchup as well. You can use beef, turkey, chicken, pork, veal. The options are really quite limitless.

Slow Cooker Ravioli – So simple it’s almost idiot-proof

1 (25 oz.) bag beef or cheese ravioli
1 (26 oz.) jar pasta sauce
1 (8 oz.) can tomato sauce
1 cup water
1 cup shredded mozzarella cheese

Pour about 1/2 the pasta sauce in the bottom of slow cooker. Add frozen ravioli. Pour additional pasta sauce, tomato sauce, and water over ravioli. Sprinkle cheese on top. Turn slow cooker on low and cook for 4-5 hours (until ravioli are tender).

Recipe: Chicken and Broccoli Casserole

Ingredients

  • 3 c. noodles, cooked and drained
  • 1 can condensed cream of mushroom soup
  • 3/4 c. milk
  • 1 c. chicken, shredded or cut into bite size pieces
  • 1 bag frozen broccoli

Instructions

  1. Preheat oven to 375 degrees.
  2. Grease or spray with Pam a 2 quart casserole dish.
  3. Steam broccoli per directions
  4. Mix all ingredients and place in casserole.
  5. Bake at 375 degrees for 1 hour and 15 minutes.

Quick Notes

One of the things that I love about it is the versatility and the ability to substitute to taste. If you don’t like chicken, you can make it with the traditional tuna. You can use turkey, ham or pretty much any kind of meat you have. You can use leftovers from the day before, even. I roasted a whole chicken for soup, only used a small amount in the soup, so we cut the rest up and stored it for other dishes.

If you don’t like broccoli, you can leave it out or you can use peas, cauliflower, or pretty much any other vegetable in it that you like. I’ve seen people use green pepper in theirs.

If you don’t like cream of mushroom soup, you can use cream of celery, cream of chicken, or even cheddar soup. You can substitute with any variation of cream sauce you wish.

This is a great comfort food meal, great for a cold winter day.

Recipe: Breaded Chicken Parmesan

Ingredients

  • One quarter of a double skinnless, boneless chicken breast
  • 1 tbsp grated Parmesan cheese
  • 1/4 cup Italian-style bread crumbs
  • 1 tsp garlic powder
  • 1 tbsp onions, dried
  • Crushed red peppers if desired
  • 1 -2 tbsp olive oil

Instructions

  1. Cut the 1/2 chicken breast horizontally so you will end up with two thin pieces.
  2. Rub each piece with olive oil.
  3. Mix dry ingredients together and pat each piece with the crumb mixture until well covered.
  4. Bake at 375F for about 20 minutes.

Diet (other): Low calorie, Reduced fat, Reduced carbohydrate, High protein

Recipe: Bread Machine Garlic Bread Recipe

Ingredients

  • 1 cup warm water (70° to 80°)
  • 1 tablespoon butter, melted
  • 1 tablespoon nonfat dry milk powder
  • 1 tablespoon sugar
  • 1-1/2 teaspoons salt
  • 4-1/2 teaspoons dried parsley flakes
  • 2 teaspoons garlic powder
  • 3 cups bread flour
  • 2 teaspoons active dry yeast

Instructions

  1. In bread machine pan, place all ingredients in order suggested by manufacturer.
  2. Select basic bread setting.
  3. Choose crust color and loaf size if available.
  4. Bake according to bread machine directions (check the dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).
  5. Yield: 1 loaf, 16 slices

Recipe: Homemade Strawberry Bread

Ingredients

  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon almond extract (Optional – just use 1tsp of vanilla if you leave this out)
  • 1 2/3 cup flour(stir or sift before measuring)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups chopped strawberries-fresh or frozen and lightly drained
  • 1/2 cup chopped nuts-your choice (Optional)

Instructions

  1. Beat eggs until foamy.
  2. Add oil, sugar, vanilla, and almond to eggs and mix well.
  3. Stir well or sift together flour, baking powder, soda, and salt.
  4. Add to previous mixture and stir until just barely moistened.
  5. Add strawberries and nuts and lightly mix being careful not to over mix.
  6. Pour into greased 9×5 loaf pan and bake @ 350 65 minutes until nicely browned and toothpick inserted in center comes out clean. May need to put foil over top if browns too quickly.

Recipe: Farmer-Style Sour Cream Bread

Ingredients

  • 2 tb Warm water
  • 2 tb Sugar
  • 1 pk Active dry yeast
  • 2 1/2 To 3 cups all-purpose flour
  • 1 1/2 ts Salt
  • 1/4 ts Baking soda
  • 1 c Dairy sour cream, at room temperature
  • Vegetable oil
  • 1 tb Sesame or poppy seeds, -optional

Instructions

  1. Combine water, sugar and yeast. Stir to dissolve yeast and let stand until bubbly, about 5 minutes.
  2. Fit processor with steel blade. Measure 2 cups of the flour, salt and soda into work bowl. Process on/off to mix.
  3. Add yeast mixture to flour mixture. Process until blended, about 10 seconds.
  4. Spoon sour cream evenly over flour mixture. Turn on processor and add enough of the remaining flour through feed tube so dough forms a ball that cleans the sides of the bowl. Process until ball turns around bowl about 25 times.
  5. Turn dough onto lightly floured surface. Shape into a ball and place on greased cookie sheet. Flatten with hands into a circle about 8 inches in diameter. Brush dough with oil. Sprinkle sesame or poppy seeds over dough, if desired. Let stand in warm place until doubled, about 1 hour.
  6. Heat oven to 375 F. Bake until golden, 25 – 30 minutes.
  7. Remove from cookie sheet. Cool on wire rack.
